One of my favorite companies in Indiana, Smoking Goose, regularly hosts a whole-hog butchery class. I contacted them in 2012 to see if they would be ok with me making a short video of one as a side project for my personal website. Brittany got back to me, saying they all thought it sounded like a cool idea, and Chris agreed to a quick interview. He even let me join in on the butchery class for free! I got a few great cuts of pork out of it, but I'm even more happy with the final product, and the fact that they use it to this day on their site and at events.
