The temperature of water means a lot to the taste of tea. In traditional tea pouring process, there is one step known as “Nourish Supreme Harmony (‘Yi Yang Tai He’) (Tea Cooling)”, which means wait until the temperate drops to a certain level to pour tea. While waiting for the tea to cool down, I introduced the idea of “Tea Steaming (‘Zheng Cha’)”. During the process of tea making, one pours hot water into the tea pot, and spreads
tea leaves on the cover of tea pot. Thus, the steam of hot water spreads the fragrance of tea leaves while cooling down the tea, bringing people the enjoyment of smelling tea before tasting tea. When the water temperature drops, one puts the steamed tea leaves into the tea pot to make the tea ready. A small change in the way of tea pouring can bring more pleasure and enjoyment to the experience of tea tasting.
