Maniera - polished flavours
Located in the heart of Gdansk, Maniera shares an authentic approach to Polish cuisine. It's a culinary story that probably no one has told before.
With this project, we had to catch the balance between the architect's vision, the historical connotation of the place itself, and a clearly defined menu alluding to native flavors. Dedicated primarily to tourists, the restaurant was meant to prove that the Polish climate doesn't always have to be familiar.
Recipes familiar for years, but with a twist. Chandeliers and crystals at the ceiling, but you'll eat pork chops, tripe and broth here. We searched for a point of commonality between these seemingly disparate elements. We found the answer in contrast.

With a mix of different styles, we took some of the seriousness away from the distinguished decor. We bet on one card, all tricks allowed, and thus broke the pattern.
