1. Asian-Inspired Rice Bowl

Ingredients:
2 cups of white rice
2 cups of water
2 tablespoons of rice vinegar
1 tablespoon of sugar
1 teaspoon of salt
1 tablespoon of vegetable oil
2 cloves of garlic, minced
1 red bell pepper, sliced
1 zucchini, sliced
1 carrot, sliced
1 tablespoon of soy sauce
1 tablespoon of sesame oil
1 tablespoon of sesame seeds, toasted
2 green onions, sliced

Instructions:
1. Rinse the rice in a colander and place it in the rice cooker with water. Cook it using the "white rice" setting.
2. In a small bowl, mix the rice vinegar, sugar, and salt together until the sugar and salt dissolve.
3. Heat the vegetable oil in a skillet over medium-high heat. Add the garlic and sauté for 30 seconds.
4. Add the red bell pepper, zucchini, and carrot to the skillet and cook for 3-4 minutes or until the vegetables are tender.
5. Stir in the soy sauce and sesame oil.
6. Place a scoop of rice in a bowl and top it with the cooked vegetables.
7. Drizzle the rice vinegar mixture over the vegetables and sprinkle sesame seeds and green onions on top.
8. Optional: Fry tofu cubes till it's golden brown. Add to rice bowl for veg proteins.


2. Spanish-Style Rice and Beans

Ingredients:
2 cups of brown rice
2 cups of water
1 tablespoon of olive oil
1 onion, chopped
1 green bell pepper, chopped
3 cloves of garlic, minced
1 teaspoon of smoked paprika
1/2 teaspoon of cumin
1 can of black beans, drained and rinsed
1 can of diced tomatoes
Salt and pepper to taste
Chopped fresh cilantro for garnish

Instructions:
1. Rinse the brown rice in a colander and place it in the rice cooker with water. Cook it using the "brown rice" setting.
2. Heat the olive oil in a skillet over medium-high heat. Add the onion, green bell pepper, and garlic, and sauté for 3-4 minutes or until the vegetables are tender.
3. Stir in the smoked paprika and cumin.
4. Add the black beans and diced tomatoes to the skillet and cook for 5-6 minutes or until heated through.
5. Fluff the rice with a fork and transfer it to a serving bowl.
6. Spoon the beans and tomato mixture over the rice.
